. Boil 2 cups of basmati rice. (You can use any rice of your choice).

 . Stir fry carrots, onions, green peas,  cabbage, eggs and chicken sausages. I usually use butter instead of oil because i prefer the taste the butter gives.
. Add the rice into the stir fried vegetables and allow it fry for about 5mins.








Coconut Chicken Sauce.
For the chicken:
. 2 Chicken breasts
. 1 Sweet orange
. 1/2 of a lime
. 1 minced garlic
. Salt/ maggi
. Black pepper
. Curry

. Dice the chicken breasts into thick squares
. In a bowl, squeeze the orange and lime into it and then add the garlic, salt, pepper and curry
. Mix it all together and then put your chicken breasts in
. Cover with foil and leave in the fridge for about an hour.








For Coconut Sauce
. Onions
. Green and red bell peppers (tatashe)
. Carrots
. Tomatoes
. A can of coconut milk
. Fresh basil leaves
. Scotch bonnet peppers ( ata rodo)
. 2 tablespoons of olive oil
. Salt, maggi

. Dice onions, tomatoes, carrots, peppers and basil.
. In a pan, heat up olive oil and then add the diced ingredients.
. Allow fry for about 3 mins,  then pour in your coconut milk.
. Let it all simmer for 6 minutes.
. Then bring out your chicken breasts and put them in the sauce. Stir and leave for 10 mins or when the chicken is cooked.
. Be careful not to overcook.
. Some people may decide to add abit of cornflour to help thicken the sauce if they feel the sauce is not thick enough.
. The sauce is best served hot.
