Sometimes we have long days and can't be bothered with cooking an elaborate meal. Well here's a recipe that's quick and easy and also extremely filling.

2 Chicken breasts
Chicken frankfurters
Bell peppers
Scotch bonnet peppers (ata rodo)
Pitta bread
Apple cider vinegar
Olive oil
Salt, maggi and seasoning of choice.
Mayonnaise/salad dressing


  • Cut chicken breasts into strips and place in a bowl. Dice 2/3 scotch bonnet peppers and some garlic and add to strips. Season with salt and maggi then add 2 tablespoons of honey,  and a teaspoon of apple cider vinegar.  Mix together and place in the fridge for 15 minutes.
  • Dice all other ingredients except cheese and carrots. They should be grated.
  • Heat 2 tablespoons of olive oil in your frypan add the chicken strips including all the ingredients used for the marinade.
  • Add an extra tablespoon of honey and apple cider vinegar.
  • When the strips look cooked, add bell peppers, tomatoes, onions, peppers,frankfurters and allow to simmer for 5mins. Do not forget to season to your taste although I found the honey seasoning already very delicious and didn't add anything else.
  • Turn your oven/grill on and take out your oven tray.
  • Place pitta bread flat on your oven tray.
  • Put some of your chicken sauce on the bread, sprinkle some carrot, lettuce and cheese on top. Then put your mayonnaise/salad dressing.
  • Wrap/fold the bread and seal the edge with a toothpick. Please do not put too much stuff on the pitta bread in order to allow it close easily.
  • This recipe makes 3-4 wraps.
  • When all wraps have been done, place in the oven for 5mins. This allows the cheese melt and gives your bread a toasted crunchy feel.
